A beautiful Easter Simnel Cake is a traditional cake eaten at Easter. It is made as a light fruit cake with a generous layer of marzipan cooked in the middle of it, which melts and makes the cake moist and soft. The Easter Simnel cake is covered in marzipan and toasted then decorated with spring flowers and mini eggs. Yummy
